  • 2 tbsp extra virgin olive oil

  • ¾ cup ricotta cheese

  • 2 cloves garlic, minced

  • 1½ cups shredded low-moisture mozzarella

  • ¼ cup grated Parmesan or Pecorino Romano

  • Salt and black pepper, to taste

  • Fresh rosemary or thyme (optional)

  • Red pepper flakes (optional)

Instructions

  • Preheat oven to 475°F with pizza stone if using.

  • Stretch dough and brush lightly with olive oil.

  • Mix ricotta, garlic, olive oil, salt, and pepper.

  • Spread ricotta mixture over dough.

  • Add mozzarella and Parmesan.

  • Bake 10–14 minutes until golden and bubbly.

  • Rest briefly, slice, and serve.
