Classic pizza bianca made with olive oil, garlic, creamy ricotta, and melted mozzarella. Simple, rich, and deeply satisfying white pizza made at home.
1 ball pizza dough (12–14 inch)
2 tbsp extra virgin olive oil
¾ cup ricotta cheese
2 cloves garlic, minced
1½ cups shredded low-moisture mozzarella
¼ cup grated Parmesan or Pecorino Romano
Salt and black pepper, to taste
Fresh rosemary or thyme (optional)
Red pepper flakes (optional)
Preheat oven to 475°F with pizza stone if using.
Stretch dough and brush lightly with olive oil.
Mix ricotta, garlic, olive oil, salt, and pepper.
Spread ricotta mixture over dough.
Add mozzarella and Parmesan.
Bake 10–14 minutes until golden and bubbly.
Rest briefly, slice, and serve.
Drain ricotta for thicker texture.
Add mushrooms, onions, or prosciutto for variation.
Best served fresh from the oven.
