12 oz pasta
1 lb smoked sausage, sliced
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 tsp Cajun seasoning
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
Salt and black pepper to taste
Fresh parsley, optional
Cook pasta in salted water; reserve 1 cup pasta water.
Brown sausage in olive oil and set aside.
Sauté onion and bell pepper until softened.
Add garlic and Cajun seasoning; stir briefly.
Add broth and simmer a few minutes.
Stir in cream and return sausage to pan.
Add pasta and toss, adjusting with pasta water.
Stir in Parmesan and serve warm.
Adjust spice level by increasing or reducing Cajun seasoning.
