A low-carb breakfast pizza made with a crispy melted cheese crust, fluffy scrambled eggs, savory sausage, and your favorite toppings. Perfect for busy mornings or weekend brunch.

Ingredients

2½ cups shredded mozzarella and cheddar blend
6 large eggs
2 tbsp milk or cream
½ lb breakfast sausage
½ cup diced bell peppers
¼ cup diced onion
¼ cup shredded cheese (for topping)
Salt and pepper, to taste
2 tbsp chopped green onions or chives (optional)

Instructions

  • Preheat oven to 425°F. Line baking sheet with parchment.

  • Spread shredded cheese into a 10–12 inch circle. Bake 8–10 mins until golden. Let cool slightly.

  • Cook sausage in skillet until browned. Drain fat.

  • Whisk eggs with milk, salt, and pepper. Scramble gently until just set.

  • Spoon eggs over cheese crust. Top with sausage, peppers, onions, and extra cheese.

  • Bake 5–7 mins until cheese melts. Let rest. Garnish with green onions.

  • Slice and serve hot.

Notes

Use turkey sausage or plant-based versions.
Add jalapeños or hot sauce for spice.
Reheat in toaster oven for best texture.
