2½ cups shredded mozzarella and cheddar blend
6 large eggs
2 tbsp milk or cream
½ lb breakfast sausage
½ cup diced bell peppers
¼ cup diced onion
¼ cup shredded cheese (for topping)
Salt and pepper, to taste
2 tbsp chopped green onions or chives (optional)
Preheat oven to 425°F. Line baking sheet with parchment.
Spread shredded cheese into a 10–12 inch circle. Bake 8–10 mins until golden. Let cool slightly.
Cook sausage in skillet until browned. Drain fat.
Whisk eggs with milk, salt, and pepper. Scramble gently until just set.
Spoon eggs over cheese crust. Top with sausage, peppers, onions, and extra cheese.
Bake 5–7 mins until cheese melts. Let rest. Garnish with green onions.
Slice and serve hot.
