A hearty casserole that layers classic meatloaf with creamy mashed potatoes and a blanket of melty cheddar cheese — a comforting, family-friendly favorite.
1½ lbs ground beef
1/2 cup breadcrumbs
1 egg
1/2 small onion, finely chopped
2 cloves garlic, minced
2 tbsp ketchup or tomato sauce
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
Salt and pepper to taste
2 lbs potatoes, peeled and chopped
1/3 cup milk or cream
3–4 tbsp butter
1½–2 cups shredded cheddar cheese
Preheat oven to 375°F and grease a 9×13-inch baking dish.
Boil potatoes until tender. Drain and mash with milk, butter, salt, and pepper.
In a bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire, herbs, salt, and pepper.
Press meat mixture into baking dish and bake for 20–25 minutes.
Spread mashed potatoes over cooked meat layer.
Top with shredded cheddar cheese.
Return to oven and bake 15–20 minutes until golden and bubbly.
Let rest before serving.
Use ground turkey for a lighter version. Add veggies to the meat layer for extra nutrients. Great for leftovers or freezing.
