A spicy, savory pizza made with juicy chili garlic chicken, melted mozzarella, and crisp veggies, perfect for cozy nights in.

Ingredients

1 lb pizza dough
1 tbsp olive oil
1/2 lb chicken thighs or breast, diced
3 tbsp chili garlic sauce (divided)
2 cloves garlic, minced
1 1/2 cups shredded mozzarella cheese
1/4 red onion, thinly sliced
1/2 bell pepper, sliced (optional)
Salt and pepper to taste
Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Let dough sit at room temperature for 30–45 minutes.

  2. Preheat oven to 475°F (245°C).

  3. In a skillet, heat olive oil over medium heat. Add chicken, 1 tbsp chili garlic sauce, garlic, salt, and pepper. Cook until browned and cooked through, about 6–8 minutes. Set aside.

  4. Roll out dough on a floured surface into a 12-inch round. Transfer to parchment paper.

  5. Spread 2 tbsp chili garlic sauce on the dough. Top with half the cheese, then add chicken, red onion, and bell pepper if using. Finish with remaining cheese.

  6. Bake for 12–15 minutes until crust is golden and cheese is bubbling.

  7. Remove from oven, garnish with herbs, slice, and serve hot.

Notes

Use gluten-free crust or dairy-free cheese as needed. For extra spice, add crushed red pepper.
