Tender chicken and potatoes slow-cooked with garlic, herbs, and Parmesan for a comforting one-pot meal.

Ingredients

2 lbs boneless skinless chicken thighs or breasts
1 ½ lbs baby potatoes, halved
4 cloves garlic, minced
1 cup chicken broth
2 tbsp olive oil
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
¾ cup grated Parmesan cheese
Optional fresh parsley

Instructions

  • Place potatoes in the bottom of the crockpot and season lightly.

  • Arrange chicken on top and season.

  • Mix garlic, olive oil, and broth; pour over contents.

  • Cook on low 6–7 hours or high 3–4 hours.

  • Add Parmesan during the last 30 minutes.

  • Adjust seasoning and serve warm.

Notes

Add vegetables during the final 30 minutes if desired.
