Tender chicken and potatoes slow-cooked with garlic, herbs, and Parmesan for a comforting one-pot meal.
2 lbs boneless skinless chicken thighs or breasts
1 ½ lbs baby potatoes, halved
4 cloves garlic, minced
1 cup chicken broth
2 tbsp olive oil
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
¾ cup grated Parmesan cheese
Optional fresh parsley
Place potatoes in the bottom of the crockpot and season lightly.
Arrange chicken on top and season.
Mix garlic, olive oil, and broth; pour over contents.
Cook on low 6–7 hours or high 3–4 hours.
Add Parmesan during the last 30 minutes.
Adjust seasoning and serve warm.
Add vegetables during the final 30 minutes if desired.
