Ingredients

Scale

1 tbsp olive oil
12 oz cooked chicken sausage, sliced
1 small onion, diced
3 garlic cloves, minced
1 cup uncooked orzo
2½ cups chicken broth
½ cup heavy cream
½ cup grated Parmesan
Salt and black pepper to taste
1–2 cups baby spinach
Fresh parsley for garnish

Instructions

  • Brown sausage in olive oil, then set aside.

  • Sauté onion and garlic in same pan until soft.

  • Add orzo, stir to coat, then pour in chicken broth.

  • Cover and simmer 10–12 mins, stirring occasionally.

  • Stir in cream and Parmesan; simmer until creamy.

  • Add sausage and spinach, stir until wilted.

  • Season, garnish, and serve hot.

Notes

Use fresh Parmesan for best texture. Add broth if sauce thickens during resting.
