Creamy Parmesan Italian Sausage Ditalini Soup is a cozy, one-pot meal loaded with sausage, tender pasta, vegetables, and a velvety Parmesan cream broth. A rich, satisfying favorite for any night.
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 yellow onion, diced
2 carrots, diced
2 celery ribs, diced
3 garlic cloves, minced
1 tsp Italian seasoning
¼ tsp red pepper flakes (optional)
6 cups chicken broth
1 cup ditalini pasta
1 cup heavy cream
¾ cup freshly grated Parmesan
2 cups spinach or kale (optional)
Salt and pepper, to taste
Heat oil in a large pot. Brown sausage until cooked. Remove excess grease.
Add onion, carrots, celery, and garlic. Cook 5–7 minutes.
Stir in seasoning, red pepper, and salt and pepper.
Pour in broth and bring to a boil.
Add pasta and reduce heat. Simmer 8–10 minutes.
Stir in cream and Parmesan. Cook until smooth and creamy.
Add spinach or kale, simmer 2–3 more minutes.
Serve hot with extra cheese or herbs.
