  • 1 lb Italian sausage

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp red pepper flakes (optional)

  • 5 cups chicken broth

  • 1 bay leaf (optional)

  • ¾ cup ditalini pasta

  • 1 cup heavy cream

  • ¾ cup grated Parmesan

  • 2 cups baby spinach

  • Salt & pepper to taste

Instructions

  1. In a large pot, brown sausage in oil until fully cooked. Drain excess fat.

  2. Add onion, carrots, and celery. Sauté 5–6 mins. Add garlic and seasonings.

  3. Pour in broth and bay leaf. Simmer 10–12 mins.

  4. Stir in pasta and cook until al dente (8–10 mins).

  5. Lower heat. Stir in cream and Parmesan until smooth.

  6. Add spinach and cook until wilted. Adjust seasoning.

  7. Serve hot with extra Parmesan and cracked pepper.

  • Use turkey sausage for a lighter option.
