A rich and comforting pasta dish made with rigatoni, Italian sausage, and a creamy tomato sauce — perfect for weeknight dinners or family gatherings.

  • 12 oz rigatoni pasta

  • 1 lb Italian sausage (sweet or spicy)

  • 1 small yellow onion, finely chopped

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 (15 oz) can crushed tomatoes

  • ½ cup heavy cream (more to taste)

  • ½ cup grated Parmesan cheese

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • ½ tsp red pepper flakes (optional)

  • Fresh basil or parsley, for garnish

Instructions

  1. Cook rigatoni in salted water until al dente. Reserve ½ cup pasta water and drain.

  2. In a large skillet, heat oil and cook sausage until browned, breaking it up as it cooks.

  3. Add onion and sauté until soft. Stir in garlic and cook 1 minute more.

  4. Mix in tomato paste and cook for 2 minutes. Add crushed tomatoes and simmer for 10 minutes.

  5. Stir in cream and simmer until sauce is smooth and slightly thickened.

  6. Add pasta and reserved water. Stir in Parmesan and cook 2–3 minutes to combine.

  7. Season with salt, pepper, and red pepper flakes. Garnish with herbs and serve hot.

Notes

  • Use turkey sausage or plant-based sausage as desired.

  • Add spinach or mushrooms for extra vegetables.

  • Leftovers can be stored for 3 days and reheated with a splash of water or cream.
