Tender chicken breasts simmered in a rich tomato cream sauce with garlic, herbs, and Parmesan — a comforting skillet dinner that’s ready in under 30 minutes.
2 large chicken breasts, halved or pounded
1 tbsp olive oil
1 tbsp butter
1 small onion or shallot, finely chopped
3 garlic cloves, minced
1 tbsp tomato paste
1 cup crushed tomatoes or passata
¾ cup heavy cream
½ tsp Italian seasoning
Salt & pepper to taste
¼ tsp red pepper flakes (optional)
2 tbsp grated Parmesan (optional)
Fresh herbs for garnish
Season chicken with salt, pepper, and Italian seasoning. Sear in butter and oil until golden. Set aside.
Sauté onion and garlic in the same pan. Add tomato paste and cook 1 minute.
Stir in crushed tomatoes, cream, seasoning, and red pepper flakes.
Return chicken to skillet. Simmer 7–10 minutes until cooked through and sauce thickens.
Stir in Parmesan (if using). Garnish and serve.
Use chicken thighs for extra juiciness.
Add spinach or mushrooms for a veggie boost.
Serve with pasta, rice, or vegetables.
