A hearty, one-pan meal of roasted smoked sausage, potatoes, onions, and simple spices. Crispy, golden, and full of flavor — perfect for busy nights or meal prep.

Ingredients

  • 14 oz smoked sausage, sliced into rounds

  • lbs Yukon Gold or red potatoes, diced

  • 1 large onion, sliced

  • 1 bell pepper (optional), sliced

  • 23 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • Optional: Fresh parsley or shredded cheese

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment or foil.

  2. Slice sausage, dice potatoes, and slice onions and peppers.

  3. Toss all ingredients with olive oil and seasonings in a large bowl.

  4. Spread evenly on baking sheet. Roast 35–40 minutes, flipping halfway.

  5. Optional: Add cheese during last 5 minutes or broil for extra crispiness.

  6. Let cool slightly, garnish if desired, and serve.

Notes

  • Swap in sweet potatoes or turkey sausage as desired.

  • Store leftovers in fridge 4 days or freeze up to 2 months.

  • Reheat in oven or air fryer for best texture.
