A hearty, one-pan meal of roasted smoked sausage, potatoes, onions, and simple spices. Crispy, golden, and full of flavor — perfect for busy nights or meal prep.
14 oz smoked sausage, sliced into rounds
1½ lbs Yukon Gold or red potatoes, diced
1 large onion, sliced
1 bell pepper (optional), sliced
2–3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
Optional: Fresh parsley or shredded cheese
Preheat oven to 425°F. Line a baking sheet with parchment or foil.
Slice sausage, dice potatoes, and slice onions and peppers.
Toss all ingredients with olive oil and seasonings in a large bowl.
Spread evenly on baking sheet. Roast 35–40 minutes, flipping halfway.
Optional: Add cheese during last 5 minutes or broil for extra crispiness.
Let cool slightly, garnish if desired, and serve.
Swap in sweet potatoes or turkey sausage as desired.
Store leftovers in fridge 4 days or freeze up to 2 months.
Reheat in oven or air fryer for best texture.
