Mini breakfast pizzas made with toasted English muffins, eggs, cheese, and savory toppings. Perfect for quick mornings or build-your-own brunches.
4 English muffins, split and toasted
4 eggs, scrambled or cracked whole
1½ cups shredded cheese (cheddar, mozzarella, or jack)
½ lb sausage, cooked and chopped
1 tbsp olive oil or butter
Salt and black pepper, to taste
Optional: Tomato sauce, sautéed vegetables, herbs
Preheat oven to 400°F and line a baking sheet.
Toast English muffin halves until lightly golden.
If using scrambled eggs, cook them now.
Place muffins on the baking sheet. Brush with olive oil or spread sauce if using.
Top with eggs, cheese, sausage, and optional veggies.
Bake 8–10 minutes until cheese is melted.
Garnish with herbs. Serve warm.
Use gluten-free muffins or dairy-free cheese if needed.
Freeze leftovers and reheat in oven or toaster oven.
