Mini breakfast pizzas made with toasted English muffins, eggs, cheese, and savory toppings. Perfect for quick mornings or build-your-own brunches.

Ingredients

4 English muffins, split and toasted
4 eggs, scrambled or cracked whole
1½ cups shredded cheese (cheddar, mozzarella, or jack)
½ lb sausage, cooked and chopped
1 tbsp olive oil or butter
Salt and black pepper, to taste
Optional: Tomato sauce, sautéed vegetables, herbs

Instructions

  • Preheat oven to 400°F and line a baking sheet.

  • Toast English muffin halves until lightly golden.

  • If using scrambled eggs, cook them now.

  • Place muffins on the baking sheet. Brush with olive oil or spread sauce if using.

  • Top with eggs, cheese, sausage, and optional veggies.

  • Bake 8–10 minutes until cheese is melted.

  • Garnish with herbs. Serve warm.

Notes

Use gluten-free muffins or dairy-free cheese if needed.
Freeze leftovers and reheat in oven or toaster oven.
