These Greek meatball bowls combine juicy, oven-baked meatballs with rice, fresh veggies, and creamy tzatziki for a satisfying, meal-prep-friendly Mediterranean meal.
For the Meatballs:
1 lb ground beef, turkey, or lamb
1 egg
⅓ cup breadcrumbs or almond flour
2 garlic cloves, minced
¼ cup red onion, finely chopped
2 tbsp parsley, chopped
1½ tsp dried oregano
Zest of 1 lemon
1 tsp salt
½ tsp black pepper
For the Tzatziki:
1 cup Greek yogurt
½ cup grated cucumber (drained)
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp chopped fresh dill
¼ tsp salt
For the Bowls:
2 cups cooked rice, quinoa, or cauliflower rice
Cherry tomatoes, halved
Cucumber, sliced
Red onion, thinly sliced
Feta cheese
Kalamata olives
Fresh parsley or dill
Preheat oven to 400°F. Mix meatball ingredients in a bowl and form into 1½-inch balls.
Place on a parchment-lined baking sheet and bake for 18–20 minutes.
While baking, cook rice or grain of choice and prepare toppings.
Mix all tzatziki ingredients in a bowl and chill.
Assemble bowls with rice, 3–4 meatballs, fresh toppings, and tzatziki.
Store components separately for meal prep.
For dairy-free: use coconut yogurt and omit feta.
Serve warm or cold — both are delicious.
