A warm, cheesy casserole loaded with Italian sausage, peppers, and tomatoes — all baked until bubbly and golden. Perfect for easy weeknight dinners or make-ahead meals.
1½ lbs Italian sausage (sweet or spicy)
3 bell peppers (red, yellow, green), sliced
1 large onion, sliced
3 cloves garlic, minced
1 tbsp olive oil
1 can (15 oz) crushed tomatoes
1 tsp Italian seasoning
Salt and pepper to taste
1½ cups shredded mozzarella
2 tbsp grated Parmesan
Optional: red chili flakes, fresh parsley
Preheat oven to 375°F (190°C).
Cook sausage until browned. Remove and set aside.
Sauté peppers and onion until softened. Add garlic.
Stir in crushed tomatoes, seasoning, and sausage. Simmer 5 mins.
Transfer to casserole dish or bake in skillet. Top with cheeses.
Bake uncovered 15–20 minutes until bubbly and golden.
Let rest 5 minutes. Garnish and serve.
Add cooked pasta or rice before baking for a one-dish meal.
Freeze after baking or prep ahead for busy nights.
