A warm, cheesy casserole loaded with Italian sausage, peppers, and tomatoes — all baked until bubbly and golden. Perfect for easy weeknight dinners or make-ahead meals.

Ingredients

  • lbs Italian sausage (sweet or spicy)

  • 3 bell peppers (red, yellow, green), sliced

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 can (15 oz) crushed tomatoes

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 1½ cups shredded mozzarella

  • 2 tbsp grated Parmesan

  • Optional: red chili flakes, fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cook sausage until browned. Remove and set aside.

  3. Sauté peppers and onion until softened. Add garlic.

  4. Stir in crushed tomatoes, seasoning, and sausage. Simmer 5 mins.

  5. Transfer to casserole dish or bake in skillet. Top with cheeses.

  6. Bake uncovered 15–20 minutes until bubbly and golden.

  7. Let rest 5 minutes. Garnish and serve.

Notes

  • Add cooked pasta or rice before baking for a one-dish meal.

  • Freeze after baking or prep ahead for busy nights.

  • Use part-skim cheese and turkey sausage for a lighter version.
