4 medium flour tortillas
1 lb ground beef
1 packet taco seasoning
1 cup refried beans
1 cup shredded cheddar or Monterey Jack cheese
½ cup tomato sauce or enchilada sauce
2 tbsp olive oil
Optional Toppings:
Diced tomatoes
Sliced green onions
Chopped cilantro
Black olives or jalapeños
Crisp tortillas in oven brushed with olive oil.
Brown beef and season with taco seasoning.
Spread beans on one tortilla, top with beef and cheese.
Add second tortilla, spread sauce, and top with cheese.
Bake until cheese melts and bubbles.
Top with fresh ingredients, slice, and serve.
