2 lbs ground beef (80/20)
½ cup milk
1 cup plain breadcrumbs
2 large eggs
½ cup grated Parmesan cheese
1 small onion, grated
3–4 cloves garlic, minced
1 tsp Italian seasoning
1 tsp salt
½ tsp pepper
Topping:
2 tbsp butter
1 clove garlic, minced
1 tbsp parsley
2–3 tbsp grated Parmesan (for topping)
Preheat oven to 375°F. Line loaf pan or baking sheet.
Soak breadcrumbs in milk for 2–3 minutes.
Add beef, eggs, Parmesan, onion, garlic, seasoning, salt, and pepper. Mix gently.
Shape into loaf in pan. Bake 45–50 minutes.
Melt butter with garlic and parsley. Brush on loaf at 40-minute mark.
Sprinkle extra Parmesan on top. Bake 10–15 more minutes (until 160°F internal temp).
Let rest 10 minutes before slicing.
