A spicy, creamy one-pot pasta loaded with smoky sausage, Cajun flavor, and tender noodles all simmered together for an easy, comforting dinner.
12 oz short pasta (penne or rotini)
1 lb smoked sausage (Andouille or kielbasa), sliced
1 tbsp olive oil or butter
1 onion, diced
1 bell pepper, sliced
3 garlic cloves, minced
1½ tbsp Cajun seasoning
3½ cups low-sodium chicken broth
¾ cup heavy cream
½ cup grated Parmesan
Salt and pepper, to taste
Fresh parsley and red pepper flakes, for garnish (optional)
Heat oil in large skillet. Brown sausage slices, then remove.
Sauté onion and bell pepper 3–4 minutes. Add garlic and Cajun seasoning. Cook 1 minute.
Add pasta and broth. Bring to boil. Reduce heat and cover. Simmer 12–15 minutes, stirring occasionally.
Stir in cream and cooked sausage. Simmer 2–3 more minutes.
Remove from heat. Stir in Parmesan and season to taste.
Garnish and serve hot.
Add shrimp, mushrooms, or spinach for variation.
Use half-and-half or light cream for a lighter option.
Store leftovers up to 4 days in the fridge.
