A spicy, creamy one-pot pasta loaded with smoky sausage, Cajun flavor, and tender noodles all simmered together for an easy, comforting dinner.

Ingredients

12 oz short pasta (penne or rotini)
1 lb smoked sausage (Andouille or kielbasa), sliced
1 tbsp olive oil or butter
1 onion, diced
1 bell pepper, sliced
3 garlic cloves, minced
1½ tbsp Cajun seasoning
3½ cups low-sodium chicken broth
¾ cup heavy cream
½ cup grated Parmesan
Salt and pepper, to taste
Fresh parsley and red pepper flakes, for garnish (optional)

Instructions

  • Heat oil in large skillet. Brown sausage slices, then remove.

  • Sauté onion and bell pepper 3–4 minutes. Add garlic and Cajun seasoning. Cook 1 minute.

  • Add pasta and broth. Bring to boil. Reduce heat and cover. Simmer 12–15 minutes, stirring occasionally.

  • Stir in cream and cooked sausage. Simmer 2–3 more minutes.

  • Remove from heat. Stir in Parmesan and season to taste.

  • Garnish and serve hot.

Notes

Add shrimp, mushrooms, or spinach for variation.
Use half-and-half or light cream for a lighter option.
Store leftovers up to 4 days in the fridge.
